About Sanctum Coffee

Sanctum Coffee was built from years of curiosity, conviction, and a lot of coffee.

Over the last two years, Kitty and Gilbert Saldana spent an embarrassing amount of time (and money) in coffee shops while Kitty was in PA school and family life stayed full with two kids at home. Somewhere along the way, coffee became more than a daily habit. They began noticing the difference between quality coffee and trendy coffee and once they noticed, they couldn’t untaste it.

That curiosity turned into real appreciation. They began learning about farmers, roasters, origins, processing, and all the small details that shape what ends up in the cup. The more they learned, the more they wanted to create a space that honored the work behind great coffee.

That’s why they built Sanctum to be set apart.

Their approach is back to basics: highlight the coffee, respect the roaster, and let quality speak for itself. They’re not here to drown drinks in sugar and whipped cream or chase trends for the sake of trends. They believe in doing right by the coffee and by the people who produce it.

Sanctum is also part of their personal story. The name is rooted in faith (like sanctuary), and the lamb logo reflects that foundation. At the same time, the shop carries the things that shaped them too, pop-punk, emo, and skate culture because they wanted the space to feel honest, creative, and fully theirs.

Gilbert’s path to coffee wasn’t a straight line. After years in Washington, D.C., studying at Georgetown and later working in tech sales, he knew he wanted to build something more meaningful with his own hands. He trained at Texas Coffee School in Arlington and immersed himself in the craft and business of coffee. Since August 2025, Kitty and Gilbert poured themselves into making this dream real.

In February 2026, they finally opened their doors.

Their goal is simple: to build a community of people who truly appreciate coffee and want to do right by it, too.
